Taco Soup

Quite possibly the quickest and easiest thing you'll make this year..... so long as you plan ahead with the meat. (I used turkey and only half of what was called for and that was plenty.) Another delicious recipe from my sister tucked into the make often category.



Taco Soup
2 large frozen chicken breasts cooked in crockpot 1-2 hours on high or 3-4 hours on low with a little water. Drain chicken when cooked, shred chicken once it is cooled and place in crockpot along with :

1 can kidney beans (undrained)
1 can black beans (undrained)
1 can petite diced tomatoes (undrained)
2 small cans tomato sauce
1 can corn (undrained)
1 packet ranch seasoning
1 packet taco seasoning
1/2 cup water

Simmer on low until ready to eat.

Add crunched up taco chips, sour cream, avocado chunks, and shredded cheese.

You can replace the chicken breasts with 1 pound of ground beef if you want it even quicker. (So I've heard from my sister. The turkey was a big step that my husband and children were thrilled with. Ground beef would seriously be taking things a bit too far...)
