Cobbler

As the berry season progresses it is nice to try a variety of recipes for cobblers, pies, smoothies, and other such desserts. My favorite so far this season is a supremely simple recipe that I found in the August issue of Family Fun magazine. Toss in whatever fresh fruit you have on hand (I used blueberries, blackberries and boysenberries), top with a scoop of ice cream (or not) and enjoy fresh from the oven.



SUMMER FRUIT CRISP

Topping
1/2 cup light brown sugar
1 cup quick cook oats
1/4 cup flour
5 Tbs. unsalted butter, melted
1/2 t. cinnamon 1/4 t. ginger

Filling
5 cups chopped fresh fruit
3 Tbs. brown sugar
1 Tbs. flour
1 Tbs. orange juice
1/2 t. orange zest


1. Heat the oven to 400 degrees

2. Combine all of the topping ingredients in a medium bowl. Rub the mixture together with a fork or pastry blender until clumps form.

3. In an 8-in. square baking pan, gently toss the filling ingredients. Sprinkle the topping over the fruit.

4. Bake the dish until the fruit is bubbly and the topping is crisp, about 40 minutes. Let the dish cool for 15 minutes before serving.
